Patok Foods for rainy season...


ARROZ CALDO

Ingredients:

1 kilo chicken; cut in small pieces
1 cup uncooked malagkit or plain rice or combination
1 small onion; chopped
5 pieces garlic; chopped
1 root ginger; sliced
6 cups water or broth
Cooking oil
Salt (optional)
Chicken cubes (optional)
1 tablespoon minced fried garlic (for garnishing)
1 tablespoon scallions/spring onions (for garnishing)


Procedures:

1.   Heat casserole and put cooking oil.
2.   Sauté garlic until golden brown then add onions and ginger.
3.   Afterwards, add the chicken and continue cooking for several minutes.
4.   And then add the rice, while stirring let it cook for 2-3 minutes.
5.   Add the chicken stock when the rice has thickened and mix it well.
6.   Make sure all the lumps are smooth before adding rice to the path.
7.   Continue cooking over low heat for 20 minutes. Afterwards, turned off the fire
8.   Before serving put the chopped of spring onions and fried garlic on top. Add boiled egg if preferred.

Chicken Sopas
Sopas literally means soup but in Filipino cuisine it's a soup made with pasta, meat, vegetables and milk.
 
Ingredients:
half kilo of chicken cut in smaller portions
3 pieces of garlic
1 onion sliced
1 carrot cut in julienne strips
1 cabbage
1 cup of evaporated milk
half kilo of macaroni noodles
1 liter of water
salt, pepper
Procedure:
1.    Prepare the casserole and preheat the cooking oil.
2.   Sauté the garlic until golden brown and add immediately the onions and the carrots.
3.   Afterwards, add the chicken, continue mixing and cook for several minutes.
4.   Pour water and cover it until boiled.
5.   When the water is boiling, add the macaroni noodles and continue cooking for about ten minutes.
6.   Then add milk, salt and pepper to taste.
7.   Lastly,add up the cabbage and continue cooking for three minutes and then turn off the fire.
-and your chicken sopas is now ready to serve.
